ByTheBees Pure honey is a natural, Australian product with optimum taste and the beautiful imperfections of anything that comes straight from nature. We do not pasteurized (heated to 70 degree) to make the honey look smoother and stays at a runny consistency. We also don't mix local honey with others imported ingredient. Purely local and raw.

That means that raw honey will always crystallize within a few months after being harvested from the hive. This has no impact on the product, other than giving it a thicker texture. Actually, raw honey tastes better, as heating denatures the products’ fine aromas and enzymes. Raw honey also has a lot of health benefits, as it is high in antioxidants, making it great for people with a common cold or sore throat, and, when taken daily, can assist those with hay fever.

By The Bees Creamed Pure in 120g jar

ByTheBees Creamed Pure honey it's the same honey! It just gets churned every 15 minutes per hour for 96 hours!

What is creamed honey?

Creamed honey is also known as whipped honey, churned honey,
Creamed honey is actually honey that has undergone controlled crystallization. The crystals are incredibly fine – much smaller molecules than normal – giving it the luxurious feel of double cream on the tongue! Production involves adding a ‘creamed honey culture’ which then starts to spread throughout the honey, creating those fine crystals.

What do with creamed honey?

Well, it has an irresistibly smooth, spreadable consistency. Use it in exactly the same way as you would any other honey. Add a little creamed honey to buttered crumpets for a yummy breakfast dish that’s hard to beat! You won’t forget once you’ve tried it – it’s amazing!
Honey will naturally crystallize with age; this occurs when the molecules harden and the honey thickens as a result. This process is completely normal and does not mean that the honey has gone off or spoilt as some people may think. The easiest way to reconstitute the honey back to its original pouring consistency is to place the jar of honey in some warm water. Be careful, because much hotter than about 40C and you run the risk of killing all the good enzymes, vitamins and minerals.

Picture with the author of "For The Love of Bees" by Ben Moore, published in Dec 2020

‘Honey bees have evolved a complex social system and, in the construction of their nests, have scaled the heights of engineering perfection. They produce a natural sweetener that keeps forever, plus an incredible ‘superfood’ with magical properties and a utilitarian substance – beeswax – that is almost unparalleled in its versatility.
Constrained by a brain the size of a sesame seed, these enigmatic insects can nonetheless perform the complex calculations necessary to navigate unerringly to a food source – the coordinates of which are communicated to the colony using the only known abstract language not invented by humans. Honey bees are armed with a battery of sensory equipment capable of detecting temperature, humidity, wind speed, chemical signatures and polarized light, as well as magnetic and gravitational forces, and have also acquired the ability to see ultraviolet light. As essential pollinators, they are vital for the continued integrity of the floral landscape and, by extension, for the very survival of the human race. ~Ben's Bees

What is raw honey then?

It’s honey that has come straight from the bees, and is not treated in any way. It is taken from the hive in frames, spun with centrifugal force, and drained through a fine sieve to remove any wax particles. After that, we bottle up the honey for you and it is ready to make any dish delicious and nutritious, from breakfast cereal to a Sunday roast. In our café, it is also a topping for freshly bake waffle and ice cream.
